Roasted Strawberry & Hemp Protein Granola
1 cup rolled organic oats
¼ cup hemp protein powder (or hemp seeds)
¼ cup sesame seeds
¼ cup pumpkin seeds
¼ cup raw almonds
1 tsp cinnamon
1 cup strawberries, chopped
2 Tbsp coconut oil
1 Tbsp honey
Preheat oven to 170C. In a large bowl, mix together the oats, hemp, seeds, nuts, cinnamon and salt. Then add the strawberries and work them through using your hands. Warm the coconut oil a little and mix it with the honey, then add to the granola and mix well. Pour the mixture onto a baking tray and spread out evenly. Bake for 15 minutes, then remove from the oven and mix the granola to help it cook evenly. Bake for another 10-15 minutes. It should be crispy and brown.
Let it cool and then enjoy with yogurt, fruit and more honey if you wish! Store in an airtight container in the fridge. Makes about 4 servings.
