Everyday that I wake up to sunshine in Cape Town, I feel truly grateful. Living under unremitting grey skies in Vancouver has made me really appreciate the sun and I don’t think I will ever tire of it. The only reason I ever need a Canadian winter is for skiing. That’s it. Otherwise I could live in summer forever and be very content.
The heat and sun make one very thirsty and I find myself craving fresh, cold juices. Fruit juice is unfortunately not the healthiest drink, as usually most of the fibre (pulp) in the fruit is removed in the juicer, and it’s quite high in sugar. However, since eating the whole fruit is a much better way to consume your vitamins and minerals, I’ve blended slices of grapefruit with whole frozen strawberries, preserving the nutrition/fibre value of the fruit while transforming it into a refreshing, immune-boosting beverage. Ginger is the key to adding that extra zing and helps to keep your immune system strong and grapefruits and strawberries are loaded with vitamin C.
Pink Grapefruit Ginger Juice
1 pink grapefruit, peeled and quartered
1/2 cup frozen strawberries
1 large chunk of fresh ginger, peeled
a few sprigs of fresh basil or mint (optional)
1 cup of water
Place all ingredients in a blender until smooth. Makes 2 tall glasses.
