Sometimes it’s nice to go into denial. It was practically snowing last night in Cape Town, meanwhile it’s 30+ degrees in other parts of the country. Well, raining/hailing, and it felt for a moment like I had never left Vancouver. I was still there, on False Creek, unable to see the mountains through the rain and fog…. My heart sank a little. I should mention that I have been in winter since October last year, and I am done with it.
In my mind it’s summer. I’m there, on the beach, and although we really aren’t quite there yet in Cape Town, we will be! It’s just around the corner, and I’ve heard incredible things. So instead of making soup or something warm and wintry, I made some strawberry frozen yogurt. And turned on the heater. A healthy dose of denial is just what I needed, in the form of beautiful frozen strawberries.
Strawberry Frozen Yogurt
1 cup of frozen strawberries
1/2 cup of organic or homemade yogurt*
Place the strawberries and yogurt in a blender or food processor and blend. That’s it! Enjoy.
*I combined a bit of natural Greek yogurt with some strawberry flavoured yogurt. Alternatively, you could use only flavoured yogurt if you like it sweeter, or add some honey or maple syrup
