Baking bread at home has always struck me as something that would be too much of a hassle without a bread machine (not to mention I rarely eat gluten). I have therefore never been too interested in baking bread-like things. But this gluten-free Apple Nut Butter Loaf really is the next best thing to freshly baked bread.
This is a super simple recipe and it’s not sweet at all, making it taste very much like a loaf of nutty bread. If you opt to use banana instead of apple though, it will be slightly sweeter and more like a banana bread. It’s incredible served warm with some butter and jam, but feel free to treat it as a savoury base for other toppings of your choice. It’s best eaten still warm out of the oven, but if you slice it nice and thick, it toasts really well in the toaster.
Apple Nut Butter Loaf
1 cup grated apple*
¾ cup nut butter (I used Organic Peanut Butter)
1½ cups buckwheat flour
4 large free-range eggs
¼ cup coconut oil or butter, softened
1 tsp baking soda
1 tsp mix of allspice & cinnamon
1 Tbsp apple cider vinegar
dash of sea salt
Preheat oven to 180 C. Combine all ingredients in a bowl and mix well (or put everything in a food processor and blend until smooth). Pour the batter into a lightly greased loaf pan and sprinkle with coconut flakes for decoration.
Bake for 35 minutes or until a toothpick comes out clean. Allow the loaf to cool a little before removing from the pan. Serve with butter or jam.
*Mashed banana would work well too, if you want more of a banana bread-type loaf.
**Slivered almonds or pumpkins seed would look nice too.
