Yesterday was one of the hottest days of the year in Cape Town, ending in a spectacular sunset and picnic on the beach. After spending the majority of the day in the ocean, we watched the sun dip into the golden horizon, colouring the sky bright pink and orange, and nibbled on all sorts of delicious goodies, including this Flourless Almond Butter Bread.
This bread is incredibly light and fluffy and made with only nutritious wholesome ingredients. It contains no sugar, oil, or gluten and is high in protein and healthy fats and low in carbohydrates. It’s perfect for a picnic snack with salads, and if it lasts long enough, for breakfast the next morning.
Flourless Almond Butter Bread
1 cup almond butter*
1/2 cup tahini
3 ripe medium sized bananas
4 large free-range eggs
2 tsp cacao or cocoa powder
2 tsp baking powder
1 tsp cinnamon
1 Tbsp apple cider vinegar
handful of raw almonds, chopped
*can be substituted with peanut butter or any combination of nut butters.
Preheat oven to 150C. Mash together bananas, almond butter, tahini, eggs, cacao, baking powder, cinnamon and apple cider vinegar. Mix well until smooth. Pour batter into a prepared loaf pan and sprinkle the top with chopped almonds. Bake for 50-55 minutes until a toothpick comes out clean. Allow to cool, remove from pan and slice.
